Introduction
In the south of France, in the Haute Corbière mountains, sheltered
by the "Pic de Bugarach", lies a lush green valley situated on
a sunny plateau.
A tiny road meanders along and, before emerging at the Col Saint-Louis,
passes through the village of Parahou, where the hamlet of La Borde can
be found, set back a little from the road.
It is here, in this quiet hamlet that we decided to settle in 1992, in order
to breathe new life into the old buildings. It is here that we breed and
raise Basque sheep with their unusual horns, black heads and feet, clothed
in long wool coats like flowing dresses...
Since a few years now, four Great Pyrenees have been living within the herd,
protecting them astoundingly from possible attacks of predatory animals.
The nutritious pastureland means that our ewes produce milk of a high quality
from which we make the cheese that we sell at local markets and organic
shops in the region.
Our self-catering accommodations on the farm offer comfort in a rugged and
wonderful setting which changes with the rhythm of the seasons.
